Once again, they say no we say hell yeah! Came into work one day and there it was. Santa Claus came by overnight to give us some blessing. The most amazing gluten free and soy free vegan rum fruitcake.
Growing up, having the same fruitcake year after year is both depressing and exciting. Drenched over whiskey, insert a coin into the middle of the cake, light the cake up and watch the adults’ finger come on “fire”. Then to realize it was merely the alcohol coating over the skin. Mum soaked the cake a week before Christmas, but always have an extra loaf somewhere in the fridge until mid-Jan. For some breakfast includes nothing but a cup of tea and fruitcake.
The dense, over saccharine and moist cake can be over-powering to the palette and heavy to the stomach. Without the doubt, the gluten free version is still a little dense but crumbles beautifully after it’s sliced. Filled with abundance amount of dried fruits and nuts and soaked overnight with Spanish rum. Fruitcake is for breakfast, not dessert. Life is too short. No?
