0030 behind the line

This is the beginning of a new life. A kitchen life. No one writes recipes for a life and even if they do, you always have to make it “to taste”. Somehow, riding my bike at 2313 this evening with the empty dirty roads and bright lights, I wondered how many stories can be told with every restaurant I passed by.

Behind the line today, there was an excited of new and unique change. Much of it was the determination to learn more from the chefs. Making ice cream, plating with sauces, garnishing, tossing some salad greens, asparagus from the markets etc. But there were interesting characters. All kitchen are filled with people with somewhat peculiar yet remarkable. It’s not a pretty job. Despite, Food Network and all the hype on tele, being in the hospitality business is a whole new world.

It’s only day one. So look out for more postings!
